I’ve been thinking about toast a lot recently, I think it’s all the running I’ve been doing, miles and miles of it. Mulling over even the seemingly most insignificant of things to while away the miles, toast. After declaring here some weeks ago I’m not a bread kinda girl, I have realised the inaccuracy in this statement and as honesty is at the centre of my writing core I must confess it’s just the soft doughiness of bread I’m not fond of, but pop it in the toaster, give it some crunch, some firm edged crispiness and I’m all in.
Think about warm buttered toast, straight from the toaster, spread the butter immediately and watch as it drips over the crusty edge, lick it from your lips. Is there anything better? Personally I also love crispy bacon between two pieces of lightly toasted brown, butter and ketchup and that is my Sunday morning heaven, especially if Mr H is making. No soggy baps here please.
So as I put one foot in front of the other time and time again I’ve been thinking of this very delicacy, toast. I know that it is something I can make easily for myself as soon as I’ve finished a long run, a mile or so to go and I will start to wonder what we have available to top this crispy delight. I’m savoury not sweet, so peanut butter or creamy soft cheese are favourites. Sometimes I can’t wait to see what’s in the fridge that I can conjure into a delicious reward. Into the toaster slots the bread and then a minute or so to sort the topping.
The other day after 6 fast miles, I invented myself a new favourite. Soft avocado, sliced cherry tomatoes, crumbled feta cheese, salt, pepper and a splash of olive oil. Mash and mix, up pops the toast, spoon it on and there you have it a yummy snack. And although this could be served on buttered bread it would have no appeal to me, it has to be warm and crisp, fresh from the toaster to be my heaven.
